I’m Jose Chavez, and welcome to my little corner of the culinary universe.
My journey into flavours and aromas started pretty early – think 14 years and 9 months old! Back then, you could find me in the back of a local restaurant, hands deep in suds, washing dishes.
Who knew those soapy beginnings would lead to a life full of spices, sautés, and sensational dishes?
For a good five years, I was the guy behind the scenes in various pubs and restaurants, learning the ropes and soaking in everything about food and kitchens. Then, at 22, I dived head-first into the real culinary world. I kicked off my apprenticeship under the legendary Shane Delia at Melbourne’s MAHA. Talk about a whirlwind of learning and cooking!
My culinary adventure didn’t stop there. I also had the incredible opportunity to work with the one and only George Columbaris. And guess what? I wrapped up my apprenticeship with Jacques Reymond at a swanky 3-hat restaurant. Let me tell you, those five years were nothing short of epic.
Oh, and did I mention our restaurant was featured on ‘Master Chef’? Yep, that’s right! I even had the chance to cook for the iconic Marco Pierre White. Talk about a pinch-me moment!
After that, I took the leap into my first Head Chef role in the picturesque Yarra Valley. Here’s a fun tidbit: I cooked for Heston Blumenthal – twice! From there, my path led me straight to executive roles in bustling restaurants, wineries, and cafes.
Now, I’m all about sharing what I’ve learned. I’m passionate about guiding chefs in their personal development, mastering the ins and outs of kitchen processes, and whipping up sustainable, cost-effective menus perfect for any skill level.
